Diversity Dinner transforms into week-long event for 2021

The annual Diversity Dinner event is undergoing changes this year due to COVID-19 considerations. In lieu of occurring on one day, the event will be spread across the entire week of March 15-19. Students are supplying the Dining Services staff with recipes and then the staff will prepare the food, highlighting one culture every evening.

  • Monday – Daniella’s Mexican –  Authentic Flank Steak Taco
  • Tuesday – Tam’s Vietnamese Spring Roll
  • Wednesday – Andrei’s Blini  ( Russian Pancakes with a fruit jam filling)
  • Thursday – Yadie’s Puerto Rican Ground Beef Empanadas
  • Friday- Marin’s Nikujaga – Japanese Beef and Potatoes

“It was very important to me that the tradition of the Diversity Dinner continue this year, so I looked for the safest way to hold it,” said Director of Residence Life Leann Fogle. “Finlandia’s Cafe was gracious enough to agree to cook all of the meals – limiting too many people in the kitchen at once – and we decided that since we could not all celebrate together in one space, we would spread it out to make it a week-long event. Each day, a student gets to celebrate their heritage by providing a recipe that the cafe will serve. Fellow students will get to try dishes from all around the world and appreciate and recognize the diversity we have here in Finlandia Hall. While we cannot share the meal together this year, I am excited that we are still able to share the tradition of food with one another. ”

The event will only be available to residents of Finlandia Hall. Students will continue to carry out and all policies and procedures will be the same.
